Creamy Salsa Verde

Ingredients

  • ½ cup parsley
  • ¼ cup mint
  • A handful of chives chopped
  • 1/3 cup olive oil
  • 1 ½ tbsp capers
  • 1 fat clove garlic
  • 1 teaspoon grainy mustard
  • 1-2 tbsp lemon juice
  • 1 tbsp chopped onion
  • ½ cup natural yoghurt
 

Method

Very finely chop or process all ingredients except for the yoghurt.

Adjust the consistency by adding a drizzle more oil if very thick. Taste and add more lemon juice if needed.

Fold into the yogurt and serve with cooked salmon or barbecue foods or as a dip or dressing.

This Salsa Verde is light and tangy and the creaminess is provided by the natural yogurt so it's healthy too. Try salsa Verde as a dip, an alternative to mayonnaise or hollandaise sauce or as an accompaniment to roasted meats, roasted vegetables or barbecue food.
