Method
Preheat oven to 200°C.
Butter the base and sides of a 20cm ovenproof frying pan and
sprinkle with 1 tablespoonful of sugar.
Arrange the sliced mango over the base of the dish.
Place the eggs, caster sugar and vanilla in a bowl and beat with
an electric mixer until thick and pale. On a low speed, mix in the
cream and then the flour and salt. Mix just until combined.
Pour the mixture over the mango and then scatter with dried
cranberries. Bake for 20 to 25 minutes or until puffed and golden
brown. The clafoutis will sink slightly upon cooling.
Drizzle with honey and dust with icing sugar to serve.
