Clafoutis Grand-Mere with Mango and Craisins

Ingredients

  • 1 tbsp melted butter, to grease the pan
  • 1 tbsp sugar, to sprinkle in the pan
  • 1 fresh mango, peeled and thickly sliced
  • 2 large eggs, at room temperature
  • 1/3 cup vanilla sugar (or caster sugar)
  • 1 tsp pure vanilla extract or vanilla paste
  • 1/3 cup cream
  • 2 tbsp plain flour, sifted
  • Pinch salt
  • 1/3 cup Craisins (dried cranberries)
  • Honey, to drizzle
    Icing sugar, to dust
 

Method

Preheat oven to 200°C.

Butter the base and sides of a 20cm ovenproof frying pan and sprinkle with 1 tablespoonful of sugar.

Arrange the sliced mango over the base of the dish.

Place the eggs, caster sugar and vanilla in a bowl and beat with an electric mixer until thick and pale. On a low speed, mix in the cream and then the flour and salt. Mix just until combined.

Pour the mixture over the mango and then scatter with dried cranberries. Bake for 20 to 25 minutes or until puffed and golden brown. The clafoutis will sink slightly upon cooling.

Drizzle with honey and dust with icing sugar to serve.
