Method
Heat oven to 180C and line a 23cm pie plate with sweet short
pastry and place in fridge to rest.
Heat the chocolate for 2-5
minutes in microwave on low heat and stir every minute.
Pour the melted chocolate into the unbaked pie shell and
refrigerate.
Beat eggs and sugar, add coconut and melted butter
and mix well.
Spread on top of the chocolate and pastry pie shell
and bake 180degC for 25-30 minutes.
Serve warm or cool not cold or hot!Serve very small slices with
fruit and vanilla whipped cream.
