Chicken Medallions Stuffed with Walnuts

Ingredients

  • 1 cup walnut pieces
  • 1/2 cup sour cream
  • 1 tspn dried herbes de Provence
  • Salt and freshly ground black pepper
  • 4 chicken breasts
  • Olive oil
  • 4 rashers rindless bacon
 

Method

Serves 4

Preheat oven to 200°C. Place walnuts in a food processor and process to coarsely grind.

Add sour cream and herbes de Provence and process to combine.

Season with salt and pepper, to taste.

Lay chicken breasts on a board, slicing or pounding to flatten.

Arrange a quarter of the walnut mixture in a log shape down the centre of each chicken breast.

Roll up chicken breasts to enclose filling. Wrap each chicken breast in a slice of bacon to secure.

Place stuffed chicken rolls in an oven pan and drizzle with a little olive oil and sprinkle with salt and pepper. Roast for 20 minutes then remove to rest for 5 minutes before slicing, to serve.
