Apple Slaw

Ingredients

Salad

  • ½ small white cabbage, thinly shredded
  • 2 apples, cut thinly
  • 1 carrot, peeled and grated
  • 1 tbsp cider vinegar
  • 250 ml water
  • ½ red onion, chopped
  • 3 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp fresh sage, chopped thinly
  • 2 small gherkins, diced
  • 1 tbsp roasted sesame seeds

Dressing

  • ½ cup mayonnaise
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp runny honey
  • salt and pepper, to taste
 

Method

Place cabbage, apples and carrots in a bowl with cold water and vinegar. Allow to soak for at least 10 minutes. Drain well and place in a serving bowl. Add onion, parsley, sage and gherkins.

Whisk together dressing ingredients and combine with slaw.

To serve, sprinkle with toasted sesame seeds.
