Richard Till is an enthusiastic spokesman for the importance of ordinary everyday meals, the 99% of all meals made everyday in homes all over New Zealand.

Sure fancy dinner party meals are fun to make, but the important meals that raise families and everyone's spirits are the ones made in a hurry after a long day at work while the children are fighting and without one of the key ingredients that you thought you had in the fridge, but it turns out you don't and there's not time to get it and get dinner on the table before things get ugly.

Experience and understanding of method increases a cook's ability to change recipes on the fly. Learning from your mistakes will always make you a better cook than driving around town shopping for fancy ingredients or cunning combinations of unusual flavours ever will.
