Simon Gault says...a basic guideline for cooking fish is 8 minutes per 2.5cm of thickness, but in reality everyone uses a different cooking temperature. more info

Annabelle White says..Bring 1.5-2 litres of well-salted water to a rolling boil. Cut aubergine long-ways into fine (but not too thin) slices, approx. 5-6mm thick (it's more important that it's evenly sliced). more info

Lazy Chicken Curry Laksa

Nici Wickes says...Boil egg noodles in salted water until tender, drain and set aside. Cook vermicelli by soaking in boiling water for 3-4 minutes. Drain and set aside. Shell the prawns, reserving the heads and shells. more info

Orcona Harissa Lamb Shortloin on Lemon Polenta with Arataki

Terry Lowe says...Boil milk, then whisk in polenta and salt. Add grated cheese, butter, nutmeg, egg and a couple of drops of lemon oil. Bake for 10 minutes 180C. more info
